Intensive, hands-on instruction builds both skills and confidence in a proven methodology. This expertise enables students not only to consistently produce products to specification that delight customers but also to design more resilient products, articulate their action plans, foresee and prevent errors, and troubleshoot production issues effectively.
Courses at IOCE are designed and developed under the guidance of Michelle Frame and taught by Michelle alongside experienced candy scientists with over 10 years in the industry. All instructors have hands-on experience in both production plants and development labs. Chief Science Officer Kantha Shelke, PhD, will also offer Food as Medicine, coming in fall 2025.
IOCE offers multiple course types, including open enrollment, private enrollment, and custom programs. Class sizes are intentionally limited to ensure each student receives ample time with both the methods and instructors. IOCE is located within the Victus Ars facility in beautiful River North, Chicago—right along the river!
